Umenoyado is contantly gathering information to develop new products with the help of every staff's highly energetic action so we can meet customers' needs. When liquor is produced, all of fruit juice factories are inspected thoughout Japan in order to keep the high quality. Flavor, distribution level and hygene management are also examined.
Creating "the taste of Umenoyado"
The pride of Umenoyado is honest Sake making. Even same rice have different water content level due to temperature and humidity. Therefore before the washing and soaking process, the water content level is measured to be able to steamed ideally. The filtrate is tasted during the fermentation process. High reproducibility is kept by not only the flavoring and tasting exams but the quantification of measurements .
Traditional ways of making Sake has been kept at Umenoyado. This classic ways of making Sake is time consuming however the taste becomes distinctive. This ways of making Sake has a purpose of passing the tradition. Our liquor is made by blending fruit juice that has different taste every year and our Sake with a perfect balance so the same "taste of Umenoyado" is produced.
Protecting the taste of Umenoyado
Umenoyado gathers data of all products so that even a slight change can be noticed in order to improve its quality. An automatic analytical instrument has been installed so precise data can be gathered. The process of liquor making has been manualized so anyone can produce the same quality products.
At the same time, preparation and tasting by actual people are also important. Our popular product Umeshu is prepared by hand so unchangeable good taste of Umenoyado has been kept. After the preparation, the deterioration of freshness and quality are kept at minimum by minimizing the days to the bottling.

Umenoyado keeps the high management of stock by stocktaking everyday. And it creates the best environment by having different storage temperature for each product. An effort for cost reduction is put by trying to receive good quality material and those materials are kept in easily visible safe area.

Umenoyado's Sake brewing period is 9 months. The health of brewery staff is highly important so we make sure each staff receives enough rest and holidays.
